I have to do an appetizer for 26 people at work and I was thinking of doing meat (2 per skewer, 3 skewers) and giving them 3 sauces. Being "Italian" meat I wanted to do a Green Sauce, a White Sauce and a Red Sauce. I have the White and Red figured out but I wasn't sure of any Green sauces that'd go well with Beef Meat...
